Breakfast Potato Egg Sandwich

Ingredients - Makes two sandwiches
4 Flat bread/ Bread slices
2 Eggs
2 Handfuls of Spinach
4 Potatoes (Golden Potatoes)
Sauce of Choice (I used Maple Syrup)
(I will go in detail on how to make the potatoes and eggs for your sandwich below!)
Cooking the Potatoes
Instructions
Ingredients
4 Golden Potatoes
3 cups Water
Seasonings (Smoked paprika, black pepper, & Celtic salt or seasonings of choice)
Cookware
Pan or Skillet
Spatula
Directions
Rinse Potatoes
Cut the potatoes into small squares & place cut pieces in water
Once cutting is complete, strain potatoes that were sitting in water
Place potatoes in a pan
Add 3 cups of water or until potatoes are covered
Add Seasonings (I used smoked paprika, black pepper, & Celtic salt)
Stir
Cover with a lid for 20 minutes to allow potatoes to soften (Cook on medium heat)
*You can stir occasionally, but you do not want to open the lid too much*
Once potatoes are soft, turn off heat and strain carefully if there is any water left
Set Aside






Cooking the Eggs
Instructions
Ingredients
2 eggs
2 handfuls of Spinach
1 Garlic clove
Olive oil (or oil of choice)
Seasonings (Smoked paprika, black pepper, & Celtic salt or seasonings of choice)
Cookware
Pan or Skillet
Spatula
Directions
Add small amount of oil to a pan
Grill Chopped Garlic in pan for 3 minutes (Cook on medium heat)
Add eggs/ egg
Season (I used smoked paprika, black pepper, & Celtic salt)
Let cook for 2 minutes
Add Spinach
Scramble/ Mix with Spatula
Let cook for 5 - 8 minutes or until eggs are the consistency you want




Assembling the Sandwich
Directions
Place two Slices of bread on a plate
On one side of the bread, add sauce of choice (I used Maple Syrup), cooked eggs, & potatoes
Put the other slice of bread on top to finish assembling your sandwich
